Popcorn Butterscotch Cheesecake



The pictures you will see below won’t include nicely organized baking products and in the end, a perfectly formed cake. Nope! These pictures are shot with my not-so-great iPhone 4 camera and show you my messy kitchen in all its glory. Did I want to make a post that would portray me as a domestic goddess who easily bakes a lovely cake without making the kitchen look a like battleground in the process? Yes. But alas, it seems like that’s just not me. Turns out (and I don’t know why this came as a surprise for me) I make a BIG mess.


But you know what? That’s ok. Because the end result, no matter how it looked from the outside, was delicious. Win!



I found the recipe from Stylist magazine (here is an almost identical one) and tried my luck with it on my birthday weekend.


Now I know that the whole point of a popcorn cheesecake is the popcorn, but I just didn’t feel it. I think this might be due to the fact that this was my first time air popping popcorn so it didn’t come out quite right due to lack of expertise. If you’re a pro at this you can probably make the popcorn a lot crispier and therefore a lot nicer in the base and on top of the cake!



I’d like to assure you our kitchen doesn’t usually look like this..



I was afraid I would mess up the butterscotch sauce but it was actually quite easy to make! Tasted yummy as well.



Ta-dah! A bit rough around the edges but oh so lovely on the inside.

Now that I don’t have to share my kitchen with anyone else than my boyfriend I’m already spending more and more time for baking and cooking than I used to. If anyone has any recipe suggestions for me I’d be more than happy to get some inspiration, especially if you know any yummy vegetarian dishes! I’m trying to have at least one veggie-only meal every week, but so far am struggling with having enough variety. So any ideas would be more than welcome!
